Our team is led by Chef Michael Thompson, who brings over 15 years of culinary experience to domain. After training in traditional Mexican cuisine and working in some of USA's top restaurants, Michael decided to combine his two passions: Canadian ingredients and Mexican cooking techniques.
Together with our dedicated team of food enthusiasts, we work tirelessly to perfect our recipes, create new flavor combinations, and ensure that every customer leaves satisfied and eager to return.
We believe that great food starts with great ingredients. That's why we source as many of our ingredients as possible from local farms and producers within a 100-mile radius of Texas. Our flour tortillas are made fresh in-house daily, and we use only ethically-raised meats and sustainable seafood.
Our signature maple-chipotle sauce, a customer favorite, uses real Canadian maple syrup sourced from a family-run sugar bush in Quebec, combined with house-smoked chipotle peppers for a uniquely Canadian twist on a classic flavor.
